Natioinal Pizza Week!

This week is National Pizza week. So I decided to make pizza.
Sorry, I just couldn’t imagine putting fish on pizza, so no fish recipe this week. I have had a couple people ask me this week for this recipe so here you go.

I found this website through a friend. The recipes are healthy, she states whether they are gluten free, Atkins diet, and low carb. All good healthy recipes that taste good. You don’t have to be on a special diet to enjoy it.
They are just changing the website over from a blog, so have patience finding other recipes. This recipe is made with eggs and cream cheese. She also has cauliflower pizza crust.
George loves this pizza too. We pile it high with meat and cheese and veggies, and amazingly it holds together like a crust made with flour.
This recipe also makes great hamburger buns and hot dog buns. Although we have only used it for the pizza crust.

Oopsie Rolls (Gluten-Free Buns)

3 large eggs
pinch of cream of tartar (1/8 tsp)
3 ounces cream cheese (Do not soften)

Preheat oven to 300 degrees F.

Separate the eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you’re using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.
Spray a cookie sheet with non-stick spray and spread the batter out around the pan evenly. If you are going to make buns, spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.

Bake about 30 minutes

In the meantime, prepare your toppings. We are using Butterball Turkey sausage, sliced black olives, chopped onions, and jalapeno’s,topped with grated cheese. We like Tillamook Sharp Cheddar, adds a little more zing!

Pull the crust out of the oven, let cool for a few minutes.
For our pizza sauce, I mixed together a small box of tomato sauce, and a small box of salsa Mexicana. Spread over the crust evenly, top with your favorite toppings,
Bake 30 minutes until cheese is bubbly on top. Enjoy!!!

Notes: If you are making these to be savory (for burgers) you can add dry mustard and dill or other seasonings to the yolk mixture. If you want a more sweet roll, add a very small amount of stevia natural sweetener to the yolk mixture.
